Cheesy Chive Potatoes

****ed potatoes are more exciting when dressed up a bit with cottage cheese or chives.

medium potatoes, boiled or baked* and peeled

2% cottage cheese
1/2 cup
15 mL
fresh or frozen chopped chives
1 tbsp
1 mL
salt
1/4 tsp
Pinch
freshly ground pepper

Directions

  • If potatoes have been refrigerated, place them in a steamer over boiling water for about 10 minutes.
  • In a warm overproof bowl, roughly mash potatoes; stir in cottage cheese, chives, salt and pepper.
  • Serve immediately or keep warm in 100°C (200°F) oven.

Microwave Directions

In a microwaveable container, roughly mash potatoes; stir in cottage cheese, chives, salt and pepper. Cover with lid. Microwave at High (100%), rotating halfway through cooking time, for 5 minutes
